300 grams chocolate with a minimum cocoa content of 60% must be melted on the steam bath. To do this, place it in a small glassware, dividing into small pieces. Pour some water into the pan and put on a medium heat. Once the water has boiled, reduce the fire. On top, place a glass container with chocolate on the pan. Under the action of steam, it will start melting. Don’t forget to stir chocolate regularly. Add 150 grams of butter. Mix the resulting mixture well.
Whisk 6 egg yolks with 2 tablespoons of sugar sand for 30-40 seconds. You can use a mixer or blender.
