Tea caffeine is milder, so it doesn’t affect the nervous system and heart as dramatically. This occurs because tannin muffles the action of the alkaloid and reduces its concentration. Two of these substances, combined with each other, obtain a new component, thein. It is very slowly absorbed into the blood, but quickly excreted from the body. Thein makes tea safe for health because it’s impossible for them to get poisoned.
The caffeine content in tea can be very different, it is affected by its variety. The highest content of this substance is found in young tender leaflets and kidneys (types). These parts of the plant are necessarily part of a good tea, which can have up to 4 -5% caffeine. The second flush leaflet contains 3 -4% of this component, the third – 2.5%, the rest – 0.5 -1.5%.
The place of growing tea is also important. The amount of caffeine is affected by climate, soil, altitude. Low temperatures slow the growth of the plant, so the caffeine in the leaves gets bigger. Intense sunlight leads to the same results.
It is worth paying attention to the degree of fermentation of tea leaves. The higher this rate, the less caffeine the plant has. Therefore, green, white teas and ooluns contain more of an alkaloid.
The caffeine content of tea is also affected by the way of brewing. In boiling water, this substance is released faster, so with a long insistence it has time to stand out a lot of caffeine, it is not necessary to brew the drink longer than five to six minutes.
