Chemical composition and beneficial properties of cinnamon
Ceylon cinnamon contains large amounts of fiber, tannins, resin, gum, pectin, insignificant amount of fat, up to 3.5% of essential oil. Due to its special strong aroma and spicy taste, cinnamon is widely used in cooking. Spice is used in salting and marinating mushrooms, cucumbers, tomatoes, watermelons, in canning fruits and berries. It enters a variety of spicy mixtures, combined with ginger, cloves, cardamom, nutmeg, anise, zest of orange and lemon, vanilla. Shredded cinnamon is added to bakery and confectionery products, sugary drinks, desserts and even to fermented milk products, porridge, soups. This spice is an ingredient of an ancient Russian drink – bitnia.

Sometimes under the guise of cinnamons sell cassia. Cassia is the bark of a Chinese cinnamon tree containing coumarin. This aromatic substance has a harmful effect on the body and can trigger cancer. When buying cinnamon in ground form, always pay attention to marking. Ceylon cinnamon is labeled as Cinnamomum zeylonicum, cassia as Cinnamomum aromaticum. At home, it is possible to distinguish cassia from real cinnamon using iodine. Drop a small amount of iodine into a small part of the purchased spice: Cassia becomes saturated dark blue when interacting with iodine. Real cinnamon gives a faint-blue shade.
Therapeutic properties of cinnamon
Cinnamon has an antibacterial, antiviral and tonic effect on the body. It improves appetite, reduces spasms in the stomach and intestine, reduces elevated intestinal peristalsis and reduces gas formation.
