Baked courgettes with minced meat: recipe
– 1,2-1,5 kg young courgettes;
– 600 g pork;
– 400 g beef or veal;
– 1 chicken egg;
– 4 tbsp rice;
– 1 carrot;
– 1 bulb;
– 1 tomato;
– 50 g hard unsweet cheese;
– 3 sprigs of dill and parsley;
– 1/3 tsp black ground pepper;
– 2.5 tsp salt;
– vegetable oil.
If you prefer to use only lean meat or poultry breast to stuffing vegetables, put a spoon of sour cream in the filling to make it more gentle.
Put boiled rice. Wash the chunks of pork and beef, discuss them with a paper towel, cut into large bars and skip through the grinder. Peel the bulb from the husk, chop and divide into 2 servings. Add half onions, boiled rice, chopped greens to the minced meat, pour the egg in there, pour the ground pepper and 1.5 tsp salt. Mix everything well, preferably with hands, so that all components are distributed evenly.
If stuffed courgettes turned out too much, place the part on a tray or flat plate, wrap with food wrap and freeze for the future.
Cut the zucchini leather and cut each across into 2-4 thick mugs. Gently cut the hearts out of them. Set aside the flesh, and the remaining “cups” without bottom fill with minced meat. Put the filling tightly enough that when cooked, stuffed vegetables do not deform.
Baked courgettes with minced meat: cooking
Make a fragrant roast for the main course. Rub the carrots on the grater, cut the tomato and central parts of the courgettes into small pieces. Heat the vegetable oil in a pan and roast the leftover onions in it for 2 minutes. Put the rest of the vegetables to it, salt to taste and simmer for 10 minutes under the lid, lulling the fire to the very minimum. Do not forget to intermittently stir the cooking mass with a wooden spoon or spade.
Set the temperature in the oven to 180oC. Take a deep tray or heat-resistant shape and smear from inside with vegetable oil. Put raw courgettes in there with cheese after half the specified time. Serve 2-3 rings with meat on each serving plate along with vegetable side dish and fresh sour cream.
