You will need
- For three servings:
- – 3 small fish swaddles weighing 200 g;
- – 5 tbsp adzhiki;
- – 3 tbsp flour;
- – 2 tbsp. spoons of vegetable oil.

Clean the fish of scales, gutted, gills must be removed – they can be mustered. Whole fish weighing 200 g can be cooked entirely, if you have bigger fish – you can cut into pieces. You can cut off your tail and head, but it’s better to fire the fish whole.

Add the ajika to the fish, smearing the fish outside and inside. You can take a purchase ajika or cook it yourself from fresh tomatoes. If the ajika is very sharp, mix it with a little tomato juice.

Leave to marinate the fish for 40 minutes.

After that, rub the fish in flour, do not shake off it pieces of ajiki – so it will be tastier.

Put a frying pan on the heat, add vegetable oil, lay out the fish, fry over high heat. On one hand fry 3-5 minutes until golden crust, then as much on the other. Note – swaddling is a “round section” fish, so fry it on four sides.

Serve ready-made swalengas with vegetables, such as fresh tomatoes, cut slices.
