Fried cod in Spanish with pieces of jamona

You will need


  • recipe for 4 servings
  • – fillet of cod 4 pcs of 200 g;
  • – butter 80 g;
  • – jamon (can be replaced with other jerky meat) 100 g;
  • – garlic 1 tooth.

  • – shallot onion 1 pcs.
  • ;

  • – almond flour (or 5-6 almond nuts);
  • – Dijon mustard 1/2 tsp;
  • – lemon juice 2 tbsp;
  • – parsley;
  • – olive oil;
  • – pepper;
  • – salt.

Preheat the oven to 200oS. Chop the parsley, onions – shallots and garlic. Hamon cut very finely. Grind the almonds in a blender. Mix the butter, mustard, lemon juice in a bowl. Add the parsley, garlic, shallots, jamon and almond flour, pepper a little and salt.


Heat the olive oil in a frying pan over a medium heat. Season the cod fillets with salt and pepper, fry 2 minutes on one side. Then turn over and fry for another 1 minute.


Put 1 tablespoon of the oil mixture on each fillet and put the pan in the oven for 3-5 minutes until the fillet is opaque in the center of the piece. Place the fish on a dish and keep warm.


Add the remaining oil mixture to the pan and mix with the juice from the pan, pour the fish. Serve with lemon.
