Protein content in meat
Different foods contain different amounts of proteins. The most complete proteins are present in beef, their amount is 25%. Their composition contains all essential and replaceable amino acids. The body more easily assimilates veal, it also has many proteins (up to 20%). Pig meat, compared to beef, contains fewer connective tissues, so it is tender than beef, and softer. Protein in pork – from 14% to 19%. Lamb is stiffer than beef, it has fewer salts of iron, potassium, phosphorus. The amount of protein in lamb is 20%. A wonderful diet product is rabbit meat. It has quite high protein content (21%), B vitamins, iron.
Offal is no less useful than meat. Since their composition contains a large amount of minerals, iron, vitamins, they are recommended for people with anaemia.
Protein content in chicken and fish
Unlike beef, chicken contains full-fledged and easily digestible proteins with the most acceptable amino acid composition for the organism. In chicken meat there is a necessary combination of minerals and vitamins. Fish proteins contain all amino acids beneficial to the body. Unlike meat products, fish proteins have the essential amino acid methionine, there is little connective tissue in them, which is represented by collagen that easily passes into its soluble form – gelatin.
Fish proteins are better absorbed by the body – 93— 98% (meat proteins – 87— 89%). The amount of protein in fish composition depends on the species. It averages 16%. Fish oil contains large amounts of polyunsaturated fatty acids. A very valuable food product – fish caviar. It contains 30% protein and up to 15% fat (up to 15%), fat and water-soluble vitamins, phosphorus, potassium. Smoked and salted fish are a less valuable food item. The proteins in it are much worse digested and digestible.
Canned fish do not have a large number of valuable qualities, as beneficial substances are destroyed during the preserving process.
Proteins contained in eggs and dairy products
The most complete protein fully absorbed by the body is found in chicken eggs. Egg protein has the optimal ratio of essential amino acids, it consists of substances perfectly digestible after heat treatment. But raw egg white is absorbed poorly due to the presence of compounds that suppress the action of enzymes that are necessary for digestion.
Proteins are also in dairy products. Their number in each particular product is different: in milk approximately 5% protein, in cheese about 22%. In dairy products there is casein, which is long digested by the body, so nutritionists recommend eating them in the evening. People watching their weights are better to choose skimmed milk and cottage cheese for nutrition, as the cheese contains a large amount of fats. During the day it is important to maintain high levels of protein in the body, so it will be better to eat often and small portions.
