Beef with mushroom stuff

You’ll need
  • For 4 servings:
  • – 700g beef flesh;
  • – 125g calf mince;
  • – 100g champignons;
  • – 100g oyster;
  • – 1 small onion bulb
  • – 1 sprig of thyme
  • – 350 g shallots
  • – 3 tbsp balsamic vinegar
  • – 100 ml cherry juice
  • – 1 asterisk anise;
  • – salt.

Mushrooms, wash and cut finely. Peel the onion onions and cut into cubes. Heat olive oil in a pan, fry mushrooms and onions in it. Add crushed thyme, salt and pepper. Cook over medium heat, stirring, until the liquid is evaporated. Mix the cooled mushrooms with the minced meat.


Rinse the beef and discuss. At the top of the piece, make an incision 3 cm deep. Put the mushroom filling in it, scramble the “pocket” with toothpicks. Strap the meat with kitchen thread, salt. Roast the beef in olive oil on all sides. Then put the meat into shape and bake in a preheated to 180 oven for 1.5 hours.


Shallots peel, cut into thin strips and roast until golden. Add balsamic vinegar, cherry juice and anise. Cook over medium heat for 20 minutes, salt at the end of cooking.


Cut the finished dish into slices. Serve it to the table with sauce.
