How to cook a burn

You’ll need
  • – 1 liter red dry wine;
  • – 200 g sugar sand;
  • – 6 pieces cloves;
  • – 0.5 teaspoon ground cinnamon;
  • – 1 kg of crushed sugar in large chunks
  • – 250 ml of rum
  • – 0.5 cup of brandy
  • – 150 g of dates
  • – 100 g of glazed watermelon crust
  • – 100 g of glazed melon;
  • – 150 g orange candied fruit
  • – 150 g pitted prunes
  • – 0.5 cup peeled walnuts
  • – 100 g pitted raisins
  • – 100 g pineapples
  • – 0.5 l strong tea;
  • – 2 lemons;
  • – 2 oranges.

Boil mulled wine. Pour red wine into the pan, add sugar sand, cloves and cinnamon. Bring the mixture to a boil, remove from the heat and allow the mulled wine to coax for a few minutes. Then remove the spices from it.


Squeeze the juice from the oranges and lemons, cut the nuts and fill them with prunes. Cut the rest of the fruit in small pieces, put them together with the prunes in a large saucepan, set a grille on it.


Put the crushed sugar on the grate and pour it evenly with a mixture of rum and brandy. Set the sugar on fire and wait until all the alcohol burns. Melted sugar will drip on the fruit, impregnating them with alcohol.


When all the sugar drains, add hot mulled wine, strong freshly brewed black tea, lemon and orange juices to the pan. Stir the drink well and pour it over high glasses of thick glass. Add fruit to each. Zhzhenka is served after dinner on special occasions.
